My First TC (Beginner) - Possible String Hopping?

Hello CtC Team!
I'm pretty much a beginner (I've owned a Guitar for several years but tried learning songs here and there and always dropping the hobby). I'm now looking to take guitar practicing more seriously and am looking to get good fundamentals so I can try to be as creative as possible down the line.
Right now as you can see off of my Videos, my playing seems very sloppy - notes get muted and overall there is no real fluidity in my playing.
When trying to play at (relatively to my ability) higher speeds I immediately stumble over what I'm playing, losing the overall feel of left hand fretting and on my right hand, on which string I am on.
Also I think on my EJ / Yngwie licks I seem to be stringhopping I think, but then agian, I'm not really sure.
I can't seem to wrap my head around playing faster than on the recorded Videos. When I try to apply "chunking" I can't hear any other note than the one I am focusing on, which is partly why I lose track of my left hand fretting.
Any tips or solutions are more than welcome and I'm really open to really try anything to get to playing at the best of my abilities!
